As the weather gets colder and we inch towards Thanksgiving, I have been craving some delicious fall soups. There’s nothing more comforting than a warm bowl of delicious soup on a cold day. So, this week, we’re making Vegetarian Butternut Squash Soup!
This recipe uses fall ingredients like butternut squash, sage and rosemary, and ginger. You can also make this dish as an appetizer, main course, or side dish and serve it with focaccia, corn bread, or muffins. The best part is that you can make a large batch of this delicious soup and freeze the leftovers to reheat whenever you’re in the mood for soup. Enjoy your warm bowl of Butternut Squash Soup!
