With the exceptional weather that has hit us here in Buffalo (discounting Thursday- the rain is a distant memory now), it is time for some fresh summer dishes! This quick and easy vegetarian curry is a great meal to throw into your weekly summer rotation, as it utilizes the fresh vegetables and flavors of the summer months. Savor the nutrients that the sun gives us by cooking up zucchini, eggplant and green beans in a delectable curry that is sure to please. The recipe may be by Bon Appetit, but I bet it’ll be Bete Avon!
