This week we’re featuring a Buffalonian, Brocha-Leah Greenberg, who posted this delicious honey cake recipe on Facebook. If you want a no fail, super moist honey cake for Rosh Hashanah, this is your recipe (trust us – we’ve tried it)!

2 cups of flour (if you use King Arthur Whole Wheat Flour – you only need 1.5 cups of flour)
2 eggs
1 cup of sugar
1/2 cup of honey
1 cup of hot coffee
1 tsp. baking powder
1 tsp. baking soda
1/2 cup oil
1/2 tsp cinnamon
2/3 cup of unsweetened applesauce
Directions:
Preheat oven to 350 degrees.
Cream oil, eggs, and sugar.
Add the flour, baking soda, cinnamon and honey and mix.
Add the coffee with baking powder into mixture,( the baking powder will bubble with the hot coffee) mixing again. Then add the applesauce and mix again.
Bake 45 min or until golden brown.
This recipe yields one 9 x 13 pan.
