Happy New Year! At the beginning of a new year, I love to set a few goals for myself. One of my goals for 2024 is to start meal prepping healthy breakfast meals. I always find myself crunched for time in the morning, and having healthy food pre-made will help me save time and start my day off with a healthy meal.
So, this week, we’re making Spanakopita Egg Muffins! These egg muffins (or egg bites) are gluten free, high in protein, and have many nutrients. Just like traditional Spanakopita, these egg muffins are filled with many seasonings, herbs, and of course, feta cheese, to give them their distinct Greek flavor. You can make these and eat them all at once or store them in the fridge for a few days to eat throughout the week. You can also freeze them for a few months and defrost them whenever you are ready to eat. Wishing you all a happy and healthy New Year! Enjoy your Spanakopita Egg Muffins!
