This week, I wanted to focus on another Israeli recipe: Couscous salad. Couscous is a small Israeli pasta typically made with a variety of vegetables and can be served on its own or as a side with other large dishes. I also wanted to find a recipe that incorporated some of the best fall flavors that we all love, especially with Halloween right around the corner.
So, this week, we’re making Pumpkin Couscous Salad! The couscous dish is mixed with roasted pumpkin, dried apricot, feta, and pine nuts. But feel free to substitute any of these ingredients with the options listed in the recipe. Enjoy your pumpkin couscous salad!
