Mandel Bread

This week, I wanted to highlight an iconic Passover dessert: Mandel bread! Mandel bread, or Mandelbrot, is a cookie traditionally eaten on Passover. It is made with matzo meal instead of flour so that it is kosher-for-Passover, but also maintains its structure. Serving mandel bread is a delicious way to end your seder (but I also love to eat mandel bread the next morning for breakfast and dip it in my coffee).

There are many different recipes for mandel bread, but to make this one, you will need eggs, avocado oil, sugar, lemon juice, lemon zest, cinnamon, salt, matzo cake meal, matzo meal, potato starch, almonds, and chopped nuts. Enjoy your mandel bread!
