Chocolate cookies with tahini frosting

My daughter in law loves tahini…she puts it in milkshakes, bakes tahini cookies, and marbles it into homemade marshmallows. I learned from her that tahini is a delicious substitute for peanut butter in so many recipes. I love this one, a riff on Oreos, with tahini frosting in the middle.

Makes 15 Sandwich Cookies

INGREDIENTS
Cookies:
• ¾ c flour
• 6 Tbsp cocoa powder
• 3/4 tsp baking powder
• ¼ tsp baking soda
• 1 tsp salt
• 2/3 c brown sugar
• 6 Tbsp sugar
• 9 oz semisweet chocolate chips
• 7 Tbsp unsalted butter, cubed
• 1 Tbsp roasted sesame seeds

Tahini filling:
• ¾ c heavy cream
• ¾ c cream cheese
• ¼ c tahini
• 1 tsp vanilla
• 6 Tbsp confectioners’ sugar

  1. Preheat oven to 400 degrees.
  2. Line 2 cookie sheets with parchment.
  3. In a bowl, combine flour, cocoa powder, baking powder, baking soda and salt.
  4. In bowl of mixer, place both sugars and eggs and whisk till light yellow and fluffy.
  5. Place chocolate chips and butter in microwave and heat until butter and chocolate are melted together. Fold in cooled melted chocolate and dry ingredients.
  6. Scoop batter, about 2 Tbsp at a time to make 30 cookies on 2 baking sheets. Sprinkle with sesame seeds and bake 8 minutes.
  7. Make the tahini filling by beating all ingredients until medium peaks form.
  8. Once cookies are completely cooled, spread filling over the flat side of ½ of the cookies. Place another cookie on top to form a sandwich. Store in the fridge.
