My daughter in law loves tahini…she puts it in milkshakes, bakes tahini cookies, and marbles it into homemade marshmallows. I learned from her that tahini is a delicious substitute for peanut butter in so many recipes. I love this one, a riff on Oreos, with tahini frosting in the middle.
Makes 15 Sandwich Cookies
INGREDIENTS
Cookies:
• ¾ c flour
• 6 Tbsp cocoa powder
• 3/4 tsp baking powder
• ¼ tsp baking soda
• 1 tsp salt
• 2/3 c brown sugar
• 6 Tbsp sugar
• 9 oz semisweet chocolate chips
• 7 Tbsp unsalted butter, cubed
• 1 Tbsp roasted sesame seeds
Tahini filling:
• ¾ c heavy cream
• ¾ c cream cheese
• ¼ c tahini
• 1 tsp vanilla
• 6 Tbsp confectioners’ sugar
- Preheat oven to 400 degrees.
- Line 2 cookie sheets with parchment.
- In a bowl, combine flour, cocoa powder, baking powder, baking soda and salt.
- In bowl of mixer, place both sugars and eggs and whisk till light yellow and fluffy.
- Place chocolate chips and butter in microwave and heat until butter and chocolate are melted together. Fold in cooled melted chocolate and dry ingredients.
- Scoop batter, about 2 Tbsp at a time to make 30 cookies on 2 baking sheets. Sprinkle with sesame seeds and bake 8 minutes.
- Make the tahini filling by beating all ingredients until medium peaks form.
- Once cookies are completely cooled, spread filling over the flat side of ½ of the cookies. Place another cookie on top to form a sandwich. Store in the fridge.
