Aunt Dorothy's Apple Kugel

Aunt Dorothy’s apple kugel has been part of the Corris family seder for as long as I can remember. It’s also perfect for the High Holidays. She also made the best matzo balls…when mine turn out well, I always think of her.
INGREDIENTS:
• 4 large apples (any kind will work, I’m partial to red delicious)
• ½ cup sugar
• 3 tablespoons melted butter
• 1 egg
• 1 teaspoon cinnamon
• Pinch salt
• Matzo meal to hold together
DIRECTIONS:
- Peel apples & chop in food processor
- Grease 9″ pan
- Put a few dots of margarine on top and bake at 350 for one hour
If you have a big crowd, double the recipe and bake in a 9×13 pan
