I am sure that I am not the only one who enjoys a lighter meal during the spring and summer months. Sometimes, comfort foods are too heavy when it is warm outside. I like to leave those for the chilly fall and winter months. It is really simple to find a recipe that brings the sweetness of spring that does not make you feel overwhelmed.
