INGREDIENTS:
Vinaigrette
• 1/2 cup olive oil
• 2 tablespoons lemon juice
• 1 tablespoon fig preserves (or 2 teaspoons honey)
• 1 shallot, minced
• 1 clove garlic, grated
• 1/2 cup fresh basil, chopped
• Kosher salt and black pepper
– Mix all ingredients together in a jar and keep in fridge till ready to toss.
Salad
• head romaine, shredded
• 1 head radicchio, shredded
• 2 cups cherry tomatoes, halved
• 1/2 cup pitted kalamata olives, chopped
• 2 zucchini, thinly sliced
• 3 peaches, sliced into wedges
• 1 cup fresh basil leaves
• 1 cup mini mozzarella cheese balls
• 1 cup crumbled feta cheese
– Place all ingredients in a large bowl. Add dressing and toss to mix.
Crispy breadcrumbs
• 4 tablespoons butter
• 4 slices sourdough bread, torn
– Sauté bread pieces in butter till golden. Add to salad right before serving.
