Thai Mango Salad

Here’s a great salad for a July 4th cookout. Easy to throw together and tastes even better the next day!

Ingredients:
Salad:
• 3 mangoes, sliced thinly
• 1 cucumber, sliced thinly
• 1 red pepper, sliced thinly
• 1 green pepper, sliced thinly
• 1 small red onion, sliced thinly
• ½ bag shredded purple cabbage
• ½ c cilantro, chopped
• ½ c mint, chopped
• ½ c sliced almonds, toasted
Dressing:
• Mix all in a jar and shake well to combine…
• 2/3 c crunchy peanut butter
• 1 T sesame oil
• 2 T any non-flavored oil
• 2 T cider vinegar
• ¼ c soy sauce
• 2 T honey
• 2 cloves garlic, grated
• 1 T grated ginger
• 2 T cilantro, finely chopped
• 2 T mint, finely chopped

Directions:

  1. Toss all salad ingredients except cilantro, mint and almonds in a large bowl, pour over dressing and toss again to combine. Garnish with the cilantro, mint and nuts.
