My Grandma Kate Bernhard loved having us over for Sunday brunch. It was usually my father, his younger brother Dick, my sister and me. Noodle kugel, lox and bagel would abound. But on the Sunday that fell during Passover, she outdid herself. She’d wake up at the crack of dawn to make her Bubbela batter. When we arrived, she’d start all 4 burners on the stove, each holding a 12” frying pan filled to the brim with peanut oil. In each, she would fry an entire Bubbela (matzo meal pancake) for each of us. Hot out of the pan, it had to be spread with Smucker’s Strawberry Jam and sprinkled with way too much sugar. We could barely move to go home after, but what I would give to see her making them for us once more!
Ingredients:
• 3 eggs
• ½ c matzo meal
• ¾ c milk
• 2 T sugar
• 1 t salt
• Oil for the pan
• Smucker’s Strawberry Jam
• Sugar
Directions:

Mix all ingredients in a bowl to combine. Let sit for 10 minutes (or longer) for matzo meal to absorb the liquid.

Heat ¼ inch oil in a large frying pan. When hot, add all the batter and cook until bubbles form on top. Flip and cook on other side till golden brown.

Serve with jam and sugar. Enjoy.
For those who do not want to eat the whole shebang…you can make smaller pancakes too!!!
