Dairy dishes are the tradition for the holiday of Shavuot which begins at sundown this Tuesday. We typically think of cheese blintzes and bourekas, cheesecakes and rugelach. But here is an easy, make ahead and delicious way to celebrate the holiday….
Prep Time: 20 mins Cook Time: 75 mins. Serves: 10
Ingredients:
8 oz medium flat egg noodles
1 stick unsalted butter (plus 2 T for greasing the baking dish)
1 cup cottage cheese
8 oz cream cheese, room temp
2 cups milk
¼ cup sour cream (plus more for serving)
3 large eggs
½ cup sugar
2 tsp vanilla
8 tbsp brown sugar
1 lb. plums, skin on, cut into ½ inch pieces
1 lb. nectarines, skin on, cut into ½ inch pieces
2 tsp ground cinnamon
Instructions:
Cook noodles in salted boiling water until tender. Drain and stir in butter. Let cool.
In a large bowl, beat cottage cheese on low until smooth and fluffy. Add cream cheese until incorporated. Add milk, sour cream, eggs, sugar, vanilla and a pinch of salt. Beat on low until combined.
Add noodles to bowl and stir to combine.
Butter a 9 x 13 pan and sprinkle with a few Tbsp. of brown sugar. Pour the noodle/cheese mixture in, cover with foil, and refrigerate overnight.
Preheat oven to 350, bring pudding to room temperature, uncover, and bake for 45 minutes.
Remove kugel from oven, arrange fruit on top. Sprinkle with cinnamon and remaining brown sugar, return to oven and bake for another 30 minutes until the fruit is bubbling and the kugel is nicely browned. Serve with a dollop of sour cream if you like.
