Dried Cherry and Apricot Scones

My sister-in-law came for a visit last weekend. She loves breakfast more than any other meal and so I made my favorite scones for her. I hope that you like them too!

Makes 6

Ingredients:
• 2 c flour + 2 Tbsp
• 3 Tbsp sugar
• 1 Tbsp baking powder
• 1 tsp salt
• 12 Tbsp butter, cubed
• 2 eggs
• ½ c cream
• ½ c dried cherries
• ½ c dried apricots, chopped (I love Trader Joe’s “Simply Amazing Soft Dried Apricots”)
• 1 egg beaten for egg wash
• Turbinado sugar for sprinkling

Directions:

  1. Preheat oven to 400 degrees.
  2. Line a baking sheet with parchment paper.
  3. In the bowl of a mixer, mix all dry ingredients with the paddle attachment(except the fruit) and the butter until butter is the size of peas.
  4. In another bowl, mix all wet ingredients. Add these to the dry ingredients and stir just to combine, don’t overmix, you want chunks of butter still visible. Gently stir in the dried fruit.
  5. Pour the dough onto a lightly floured counter and bring together into a ball. Roll to 1 ½ “thick and cut into 6 wedges.
  6. Brush with egg wash and sprinkle with turbinado sugar.
  7. Bake for 20-25 minutes till golden brown and puffy.

    *I serve these with freshly whipped cream and raspberry butter (mix equal parts jam and softened butter together.) They are best served right out of the oven…but my sister-in-law took the rest on the plane for Monday’s breakfast!
