It’s another Friday, another Chicken recipe! So many people ask, what’s something different I can do with chicken? This is a recipe that can be used with any poultry you like and the relish and marinade are also good on fish if you prefer!
Ingredients:
• 4 lbs of chicken, cut up
• Salt and pepper
Marinade:
• 2 ½ c OJ
• 1 c pomegranate molasses
• 2 T grated ginger
• 6 cloves garlic, grated
• Salt and pepper to taste
Mix all ingredients together in a jar and shake to combine.
Relish:
• 3 oranges, any type, peeled and sectioned
• ½ c pomegranate seeds
• 2 shallots, minced
• 1 bulb fennel, sliced thinly
• ¼ c OJ
• 2 T lime juice
• 2 T olive oil
• 2 T pomegranate molasses
• 2 T mint, thinly sliced
Mix all ingredients in a bowl and place in fridge until ready to serve.
Directions:

Place chicken in a baking dish, pour marinade over it, cover and place in fridge overnight.

Preheat oven to 350 degrees. Bake chicken uncovered, for 1-1 1/2 hours or until done. Baste every 15 minutes with juices/marinade.

Place chicken on a platter, spoon the relish over it and enjoy.
