It’s apple and apple cider time of year and I’ve been thinking about using both for a roast chicken dinner. Feel free to use whatever apple you like for…

Makes 6-8 servings

Ingredients:
• 6 bone in chicken thighs or one chicken cut into 8 pieces
• 2 apples, peeled, cored and cut into large chunks
• 2 carrots, peeled and cut into 2” chunks
• 1 sweet potato, peeled and cut into 8 pieces
• 1 red onion, peeled and cut into 8 wedges
• 1 c apple cider
• ¼ c oil
• 2 Tbsp grainy mustard
• 2 Tbsp maple syrup
• 6 cloves of garlic, peeled and left whole
• Salt and pepper to taste
• 1 Tbsp fresh thyme

Directions:

  1. Preheat oven to 375 degrees.
  2. In a bowl, whisk the apple cider, oil, mustard, maple syrup, salt, pepper, and thyme leaves until combined. Set aside.
  3. Spread chicken evenly onto the bottom of a large baking dish. Add the apples, carrots, sweet potatoes, and onion on top and around the sides of the pan.
  4. Pour the apple cider mixture over all and bake for 1 hour or until chicken is cooked through. Baste a couple of times with the juices while baking.
