This week on Pandemix, we hear from Hannah Wallenfels, a graduate of the Williamsville East High School class of 2020. Hannah speaks to her experience graduating in a pandemic, how Jewish Buffalo shaped her into who she is, and of course, how to make her favorite quarantine recipe: a babka challah.

Here’s the Babka Challah Recipe 

Dough:
1 cup warm water
1 tablespoon yeast 
1/2 cup sugar (or 1 teaspoon sugar and 1/3 cup of honey)
1 teaspoon salt 
1 large egg
1/4 cup oil  
4 cups flour ( + a little extra just in case…)
1 teaspoon Vanilla extract  ( optional)  

Chocolate filling: 
1 cup cocoa powder 
3 cups sugar ( or 3 cups confectioners sugar)
3/4 cup (canola) oil 
1/2 cup boiling water  

Crumbs: 
1/4 cup flour
1/4 cup sugar
1/2 teaspoon vanilla 
2 1/2 Tablespoons oil 

Chocolate chips to add to filling and crumb 
Egg for brush 
Pam spray

Directions:
Mix water yeast and sugar, let stand for 5 minutes 
Add 1 cup flour, salt, egg and oil ( honey) and mix well
Add rest of flour and knead well, form a ball and cover
Separate Challah without a blessing.
Let rise for 1 hour
Divide dough into 2
Divide each piece into 3
Roll into rectangle 
Fill with chocolate mixture add chocolate chips if desire 
Roll into a strand  
Braid the Challah 
Let rise for another 1/2 hour
Brush with egg
Sprinkle crumbs ( and chocolate chips- optional)
Bake on 375 for about 30-40 minutes 

Filling:
Place all ingredients in a bowl and mix until smooth. 
(1 cup Chocolate chips or shredded chocolate bar – optional) 

Crumbs:
Place all ingredients in a bowl and mix until you form crumbs
