Gluten Free “Thin Mints” Cookies

Girl Scout Cookie season is upon us! These delicious cookies are a staple in my house – My favorite is Thin Mints. I think that they taste the best frozen and served with vanilla ice cream. While nothing will taste as good as the original Thin Mints, this week we are going to make homemade Thin Mints.

To give the cookies their distinct, minty flavor, peppermint extract is added to the cookie dough. After you bake the dough, you can cover the cookies with chocolate! The best part about these cookies is that they are gluten free, so everyone can enjoy. After you finish making your cookies, you can store at room temperature for about a week or freeze them to store them for longer. Enjoy your homemade Thin Mints!
