Watermelon Gazpacho

I love gazpacho, such a virtuous soup with so many vegetables.
Over the past couple of years, I’ve added watermelon to change it up a bit…it is delicious.
Makes 8 Tartlets
Ingredients:
• 4 cups tomato juice
• 1/2 cup red onion, finely minced
• 1 medium clove garlic, crushed
• 1 medium bell pepper, minced
• 1 teaspoon honey
• 1 medium cucumber, peeled, seeded, minced
• 2 scallions, minced
• Juice of 1/2 lemon
• Juice of 1 lime
• 2 tablespoons red wine vinegar
• 1 teaspoon fresh basil, shredded
• 1 teaspoon fresh mint, shredded
• 1/4 cup fresh parsley, minced
• 3 tablespoons extra-virgin olive oil
• 2 cups diced fresh, ripe tomatoes (peeled, seeded)
• 2 cups diced fresh watermelon
Instructions:
- Place all ingredients in a bowl and stir to combine. Season with salt and pepper to taste.
- Refrigerate until cold.
