Tahini Granola

My son Jonathan loves to make granola. Last week, he adapted my old recipe and used tahini instead oil in it…. he loved it! Here’s a little different version, hope you like it too!

Makes about 8 cups

INGREDIENTS:
• 2 ½ c rolled oats
• ¾ c coconut flakes
• ½ c nuts, your choice
• ½ c pumpkin seeds
• ¼ c sesame seeds
• 1 tsp salt
• ½ c maple syrup
• 1/3 c oil
• ¼ c tahini
• 1 tsp vanilla bean paste
**Dried fruit optional. I like dried apricots, figs and dates in this. If using, add after granola has cooled.

DIRECTIONS:

  1. Preheat oven to 375 degrees. Line 2 rimmed baking sheets with parchment paper.
  2. Combine all ingredients in a large bowl and mix to combine.
  3. Spread mixture onto sheets and bake, stirring every 15 minutes until golden brown…about ½ hour.
  4. Cool completely and store in an airtight container.
