Sweet Noodle Pudding for a Sweet New Year!
I love “Break the Fast”. Not necessarily due to hunger, but for the food memories of my childhood and the recipes eaten year after year, mostly on this occasion. This is my absolute favorite noodle kugel recipe. It has been passed down to me by my friends Lori and Rick Teibel. It is a unique way of making noodle kugel and is now the only one my family asks for. I am sure that you will love it too. Thank you Sue Berzon Teibel (z”l) for this one!
Preheat oven to 350 degrees
1st layer: Beat together and place on bottom of greased 9 x 13” pan
4 eggs 1 ½ c sugar
1 tsp vanilla 1 stick butter
2nd layer: Place over layer 1
1 lb cooked noodles
3rd layer: Mix all together and put on top of noodles
1 lb cottage cheese ½ c milk
1 pt sour cream ½ c sugar
4 eggs
Bake at 350 degrees for 1 ½ hours. If you want to gild the lily….you can mix together 2 c corn flakes, ¼ c brown sugar and 2 Tbsp melted butter and sprinkle over the top before baking.
