With corn season in full effect and the need to have something healthy-ish but tasty to snack on while watching the Olympics, there is only one recipe that can be shared this week: Summer Corn Rice.
The wonderful thing about this meal is its versatility and its simplicity– it is easy to make and yields excellent ratings. With both sweet and savory flavors, it can be paired with really any dish at any meal. Add it as a side to a Shabbat meal, a Wednesday lunch, or even eat it straight from the pot. The world is your oyster! Or should I say… the world is your Summer Corn Rice.
