If you are like me, you have recently become obsessed with carrots. Raw, cooked, shredded, and even purple, I cannot seem to get enough. As part of my devotion to carrots, I have in turn taken the underrated versatility of this vegetable incredibly personally. Naturally, I had to take to the platform of the Buffalo Jewish Federation Nosh of the Week to share a recipe that highlights the true range of this amazing veggie.
The Smoky Carrot Dip from Bon Appetit has a whopping 4.8/5 star review– need I say more? I will, but I probably don’t need to. Made with easy to access ingredients, this can be whipped up at a moment’s notice. It is a slight variation on hummus, so it can easily be incorporated in all your hummus friendly snacks and meals. Let the summer of carrots reign on!
