The summer is going by so fast! As we approach the end of August, I’ve been the thinking about best ways to use delicious summer ingredients before the summer ends. So, this week we are making roasted eggplant and tomato orzo pasta. All the ingredients for this recipe can be found in a supermarket, but I would recommend purchasing vegetables from a farmer’s market or local vendor to ensure you are using the freshest ingredients! You’ll also be supporting local businesses! Also, if you don’t have orzo, you can use other kinds of pasta such as fusilli or rotini. Enjoy your delicious pasta!
