As crazy as it seems, Chanukah is around the corner! For the next few weeks, I’ll be focusing on some typical recipes you can make for Chanukah. And this week, we are going to be making homemade latkes! Latkes are a classic Chanukah dish. These fried potato pancakes are easy to make, but difficult to perfect.
Make sure that you have a hand grater or a food processor handy to shred the many potatoes that you will need to have enough latkes that last all eight nights. Latkes can be fried in any kind of oil, but if you want classic Eastern European flavor, you can use schmaltz. Schmaltz can be made at home or purchased at a kosher market. No matter what you decide to do, your latkes will be delicious. Enjoy your homemade latkes!
