When I visited Israel with my friend Lori, we had the pleasure of visiting the Mahaneh Yehuda Market (The Shuk) in Jerusalem. My favorite vendor was Halva Kingdom. Talk about being a little kid in a candy shop! Their selection was spectacular, name a flavor, they carried it. My favorite was the Pistachio. Turns out, it is easy to make at home and easy to customize to your flavor liking as well! Hope you’ll give it a try!
Serves 20
INGREDIENTS:
• 1 c tahini
• ¼ c honey
• 2 Tbsp vanilla
• ¾ c coconut flour
• Pinch salt
• ¼ c pistachios, shelled and roughly chopped
DIRECTIONS:
-
1. In a medium bowl, combine the tahini, honey and vanilla. Mix until smooth and thick.2. Add coconut flour, a couple tablespoons at a time until you get a smooth and thick dough.3. Stir in the salt and pistachios.4. Line a loaf pan with parchment paper. Transfer the halva to the pan and press down well. Cover with another piece of parchment and press down evenly to compress the halva into the pan. Refrigerate for 2 hours or more.5. Slice as you desire. You can replace pistachios with any other nut you like and an extract to match.
You can marble the halva by stirring a couple of tablespoons of coca powder into half of the mix and then swirl both parts together.
