This week’s recipe has been a Kramer family staple this past week: a Paleo Pound Cake by the queen of internet recipes- Rachel Mansfield. This cake is incredibly easy to make, and it can be enjoyed by anyone with any myriad of dietary restrictions. Dairy free? You can have this cake! Gluten free? Grab a slice! Cutting out refined sugar? You don’t have to cut this out! Despite lacking the typical “pound” cake ingredients (a pound of sugar and a pound of butter), this alternative recipe still whips up an incredibly moist and decadent treat. The recipe can be customized too- swap out the coconut oil for canola, increase/decrease the maple syrup, add some chocolate chips on top. The world is your oyster! Or should I say… your pound cake.
