Mint Chocolate Chip Ice Cream Cake

My husband’s favorite flavor of ice cream is Mint Chip. This is a super simple, make ahead dessert that’s great for a snack or dessert, great to take to a party or to have on hand for one of your own. You can easily swap out ice cream flavors to make it you own. Stay cool!!
30 minutes + 2 hours for freezing | Serves 15
Mint Chocolate Chip Ice Cream Cake
Ingredients:
- 2 cups chocolate-mint or chocolate cookies (about 10 ounces), crushed
- 2 (1.5-quart) cartons or 6 pints mint chocolate chip ice cream
- 12 full-size mint chip or vanilla ice cream sandwiches
- Store-bought or homemade hot fudge sauce or Magic Shell
Instructions:
- Line a 9-by-13-inch pan with two layers of plastic wrap, leaving a few inches of overhang on all sides. Open the ice cream containers. Place ½ of the ice cream on the counter and let soften for 5 to 10 minutes. Place the rest in the refrigerator to soften while you build the first half of the cake.
- Place the crushed cookies in a thin layer across the bottom of the pan. Spoon the first softened ice cream over the cookies and spread into an even layer. Press down as you go to adhere the ice cream to the cookies. (If at any point the ice cream is melting to liquid, pop the cake and ice cream in the freezer to firm). Place the pan in the freezer while you unwrap the sandwiches. Top the ice cream with a layer of ice cream sandwiches, cutting as needed to fit the pan.
- Spoon the rest of the ice cream over the top of the sandwiches. Cover with plastic wrap and freeze for 2 hours or longer.
- Remove the cake from the pan and cut into rectangles. To serve, drizzle with hot fudge or Magic Shell
Homemade Magic Shell
Ingredients:
- 2 cups semisweet chocolate chips (can use any flavor chip…butterscotch, Peanut butter, white chocolate etc.)
- 1/4 cup refined coconut oil
Instructions:
- Melt together, cool to room temperature. Pour over ice cream to harden.
