When Passover comes to a close, oftentimes we find ourselves with a lot of leftover matzo and we don’t know what to do with it! I have the perfect solution for you. For this next week say goodbye to your traditional breakfast foods and substitute it with delicious matzo brei!
Matzo brei is one of the many foods that remind me of my family. My grandma would make the best sweet cinnamon and sugar matzo brei for breakfast. Some of my favorite childhood memories are waking up in the morning and smelling her matzo brei and running downstairs to see her ready to greet my brother and me with a big hug.
Matzo brei can be sweet or savory. I prefer a sweet matzo brei and my mom likes a savory matzo brei with sauteed onions more. I remember my brother wanting to have his with chocolate syrup and whipped cream, but I prefer maple syrup. With matzo brei, there is something for everyone and you will not let your matzo go to waste!
