How is this the last Friday in January!! It’s time for a celebration that spring is just a few more months away. Here is a nostalgic recipe that my Grandma Kate was famous for and one that she often made for Shabbat. I hope that you enjoy it too.
INGREDIENTS:
• 9 egg whites
• 1 tsp cream of tartar
• 1 ¾ c sugar
• 1 ½ c flour
• 2 tsp vanilla
• 9 egg yolks
• 4 tsp water
• 1 ½ tsp baking powder
DIRECTIONS:
Beat egg whites till stiff. In a bowl, sift together flour, cream of tartar and 1 c sugar. Fold into the beaten whites gently. Place in bottom of an ungreased angel food pan (10” tube pan). Beat yolks with ¾ c sugar until pale yellow. Add water, ¾ c flour and baking powder. Pour over the other batter. Bake 1 hr. at 350 degrees. Cool cake upside down in the pan.
GLAZE:
• 1 ½ c confectioners’ sugar
• 3 Tbsp OJ (more if needed for pourable consistency)
• 2 Tbsp grated orange peel
Mix until smooth and pourable. Drizzle over cooled cake.
