Gooey Mini Chocolate Cakes

I love a good make ahead dessert! My husband David will never admit it, but for him, dinner just isn’t complete without something sweet… but I don’t always have time to bake. You can make these gooey chocolate cakes in individual ramekins, freeze and bake them off while you are eating dinner for a quick, sweet, and easy ending to your meal!…..
Makes 8
INGREDIENTS:
• 7 oz semisweet chocolate chips
• 1 c butter, room temp
• 1 tsp vanilla
• ½ c flour
• ¼ tsp baking powder
• ¼ tsp salt
• 4 eggs
• 3 yolks
• ¾ c sugar
DIRECTIONS:
- Melt the chocolate and butter, cool and stir in vanilla.
- In a separate bowl, whisk the flour, baking powder, and salt.
- Using a mixer set on high, beat the eggs, yolks and sugar until pale yellow and ribbons form. This step is very important as it provides the structure for the cakes!
- Sift the flour mixture over the egg mixture and gently fold until incorporated. Gently fold in the cooled chocolate.
- Transfer batter evenly into (8) 1 c ramekins that have been greased and sugared.
- Wrap them in plastic wrap and freeze if you are not baking them right away.
- To bake: Preheat oven to 400 degrees. Place ramekins on a baking sheet and bake for 10-12 minutes or until the top is cracked and the middle is just a little wobbly.
**If baking from freezer, remove plastic wrap and bake for 20-24 minutes.
