Gooey Mini Chocolate Cakes

I love a good make ahead dessert! My husband David will never admit it, but for him, dinner just isn’t complete without something sweet… but I don’t always have time to bake. You can make these gooey chocolate cakes in individual ramekins, freeze and bake them off while you are eating dinner for a quick, sweet, and easy ending to your meal!…..

Makes 8

INGREDIENTS:
• 7 oz semisweet chocolate chips
• 1 c butter, room temp
• 1 tsp vanilla
• ½ c flour
• ¼ tsp baking powder
• ¼ tsp salt
• 4 eggs
• 3 yolks
• ¾ c sugar

DIRECTIONS:

  1. Melt the chocolate and butter, cool and stir in vanilla.
  2. In a separate bowl, whisk the flour, baking powder, and salt.
  3. Using a mixer set on high, beat the eggs, yolks and sugar until pale yellow and ribbons form. This step is very important as it provides the structure for the cakes!
  4. Sift the flour mixture over the egg mixture and gently fold until incorporated. Gently fold in the cooled chocolate.
  5. Transfer batter evenly into (8) 1 c ramekins that have been greased and sugared.
  6. Wrap them in plastic wrap and freeze if you are not baking them right away.
  7. To bake: Preheat oven to 400 degrees. Place ramekins on a baking sheet and bake for 10-12 minutes or until the top is cracked and the middle is just a little wobbly.

**If baking from freezer, remove plastic wrap and bake for 20-24 minutes.
