Feta-Parmesan Roasted Stuffed Dates with Honey-Walnut Herb Crunch

As I was mindlessly scrolling on Instagram over the weekend, this recipe appeared, and I thought it looked delicious. I made it and indeed it is! These little sweet and salty morsels are going to make a great appetizer for Thanksgiving Day. Wishing you all a delicious holiday filled with loved ones and delicious food.
INGREDIENTS:
For the topping:
• 1/3 c walnuts, finely chopped
• 1 Tbsp rosemary, finely chopped
• 2 Tbsp scallions, chopped
• 2 Tbsp parsley, chopped
• ½ Tbsp olive oil
• ½ Tbsp honey
• 1 Tsp orange zest
• Pinch salt
• 10 oz Medjool dates, sliced open and pitted
• Honey
• 3 oz feta sliced into 1 “pieces
• ¾ c shredded Parmesan cheese
DIRECTIONS:
- Preheat oven to 375°.
- In a bowl, gently mix topping ingredients.
- Add some honey to a separate bowl and put the Parmesan on a plate.
- Dip the feta in the honey and then the Parmesan to coat. Add this to the center of the dates.
- Arrange the dates in a greased casserole dish and sprinkle the topping over each date evenly.
- Bake for 15 minutes, remove from oven and drizzle with a little more honey before serving.
