Growing up, I always looked forward to Purim. Every year, my synagogue would host a huge Purim Carnival. I would dress up in a costume, participate in a Purim Spiel, play different games, and participate in a raffle! In lieu of Purim, we are making chocolate mint hamantaschen!
To make these delicious hamantaschen, you will need butter, grapeseed oil, sugar, brown sugar, eggs, vanilla extract, flour, cocoa powder, salt, and junior mints. The junior mints are the perfect size for these mini hamantaschen. After you make the dough, you can roll out the dough and use a round cookie cutter or a glass to cut out circles. Then, you can place a junior mint inside the circle and fold the edges into a triangle. It’s best to eat these while they’re warm to get the full effect of the melted chocolate center. Enjoy your chocolate mint hamantaschen!
